Observation (CORRECTED DURING INSPECTION): Sanitizer in container at front service area was 50ppm quat. Cloth towel also noted hanging from the side of the hand sink in cake making room at time of inspection. No concerns with sanitizer concentration in the caking making room, the main back food preparation area or the source (200ppm). Quat test strips available to verify concentration of sanitizer.
Corrective Action(s): Ensure quat sanitizer is maintained at 200ppm (change as needed) and ensure all wiping cloths are stored in sanitizer when not in use to prevent microbial growth.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No paper towel noted at hand wash station in staff washroom. Paper towel at hand wash station in cake making room was not in the dispenser and there was a cloth hanging from the side of the sink. Hand wash sink beside dishwasher was obstructed. All other hand wash stations were fully equipped and accessible. No concerns with hot/cold running water at any of the hand wash stations.
Corrective Action(s): Ensure all hand wash stations are fully equipped with hot/cold running water, paper towel in dispenser and hand soap at all times. Keep hand wash stations unobstructed and accessible at all times.

Observation (CORRECTED DURING INSPECTION): A few reusable cups noted on site. Operator said it belongs to the staff.
Corrective Action(s): Keep all employee belongings stored away and separate from food preparation/handling areas.

Freezers -9C to -21C (gelato display, 2 upright freezers, blast freezer...etc)
Good general sanitation. No obvious sign of pest activity noted at time of inspection.
Back door was closed at time of inspection.
Dipper well functional.
Low temperature dish washer had 50ppm chlorine. Chlorine test strips available to verify concentration of sanitizer.
All stored foods appeared protected (ie. stored off the ground, covered, lights in food preparation areas had covers....etc)
** Discussed operators inquiries for expanding business/operation in the future. Ensure all health approvals are obtained prior to making any changes (structural or operational) to the business (ie. adding a mobile cart, adding/changing menu, adding/changing equipment/layout of the premises...etc).
