-Commercial hood fan professionally maintained. Next service January 2017.
-General sanitation satisfactory
-No signs of pest activity noted. Pest control onsite monthly
-Discussed Hollandaise sauce practices - prepared and kept hot on hot hold until use. Rapidly cooled in ice bath and stored up to maximum 3 days.

Corrective action taken:
*One plastic insert - heavily crack down the side - discarded
*2 cleaned stacked inserts with blue berries squashed between them - taken to dish pit and cleaned
