Observation (CORRECTED DURING INSPECTION): 1) Some dining tables had prepackaged creams on them in a little tray/container. These creams are dairy products that are potentially hazardous food items and need to be kept at 4 deg C or less, not at room temperature.
2) Some items in prep cooler (beside cooking line) were above 4 degrees C: bowl of salad at 7 deg C, ham slices at 7 deg C
Corrective Action(s): 1) Discard creams. Creams should be stored in the refrigerator and only given to customers when asked. If creams are left on the table during meal service and not used, bacteria will grow inside them. Then, when they are put back in the fridge and brought out again, the bacteria remains in the food item and may produce toxins.
2) Discard above mentioned food items. All food items in coolers need to be maintained at 4 deg C or less unless they are used up within 2 hours (such as the foods in the prep inserts). However, the food items that were found to be above 4 deg C were in the bottom of the prep cooler and were not in small amounts.

Upright domestic cooler/freezer combo: 4 deg C (cooler) and -9 deg C (Freezer)
Pop coolers are not used for any potentially hazardous foods, only cans of pop/prepackaged drinks inside

Hot holding at 65 deg C (hot held unit or soups)

Kitchen:
Domestic cooler/freezer by kitchen entrance: cooler at 3.2 deg C and freezer at -13.2 deg C

Bleach sanitizer in rag bucket was at 100 ppm chlorine residual
No signs of pests, there are mice traps in each of the dry storage areas.
General sanitation ok but continued cleaning required between equipment in cooking line and underneath them

Chef and owner both have valid FoodSafe certificates (posted on wall across the stove)


Follow up to be conducted to verify that prep cooler is able to keep foods at 4 deg C or less, and to ensure creams are not being left out at room temperature.
