Observation (CORRECTED DURING INSPECTION): Observed a very large pot of pork bone soup being cooled in the Walk-in cooler -internal temperature of the soup at 63 deg C (cooked about 30 minutes ago as per operator)

Improper cooling, it will take too long to cool down the food safely this way

NOTE: this critical infraction was cited in the last routine inspection conducted on July 15, 2019 -Correction Order issued -next enforceable action is ticketing/closure
Corrective Action(s): You must cool foods FAST.

Cool the soup with an ice bath and your ice wand(s) for

Step 1: 60 deg C to 20 deg C within 2 hours
then,
Step 2: 20 deg C to 4 deg C within 4 hours

Use only scoopers and store the scoopers outside of the bulk food container in a clean washable container

-Do not use bug zapper pest control devices in the restaurant as the insect body parts are not controlled and can contaminate foods.

-Cardboard liners and packing tape observed on shelves in the kitchen
Corrective Action(s): -Increase the height of the shelf at least >15cm off the ground to facilitate cleaning and monitoring of pests underneath

-remove all paper liners and the packing tape from the shelves -you must be cleaning and sanitizing these surfaces as necessary
