-Walk in cooler at 3 deg C
-All other coolers at 4 deg C or less
-Walk in freezer at -18 deg C
-Burger patty freezer at -14 deg C
-Hot holding at 60 deg C or greater
-All burger ingredients (tomatoes, lettuce, etc) have expiry times, ensure these are updated properly (ie. do not mix up expiry time with other times)
-Eggs left at ambient temperature are on timer for 2 hours
-Quat sanitizer in rag buckets at 200 ppm QUATS and at dispenser
-General sanitation is satisfactory
-FOODSAFE certified staff on site
