308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: - Walk-in freezer: Ice build up noted on the floor and dripping occurring from the fan piping. Corrective Action(s): Operator states service was just done today to remove ice build up. New set of curtains installed on the door to prevent hot air entering into the freezer and creating condensation. Further remove the ice build up on floor to prevent slipping. Keep monitoring for dripping around the pipes and repair it again if the issue seems to be not resolved. Violation Score: 3

All handsinks are fully equipped. All cooling units at 4C or below. Walk-in freezer at -8C. All hot holding units at 60C or above. Hot temperature dishwasher reached 78C during the final rinsing cycle. QUATS sanitizer from dispenser measured at 200ppm. Ideal storage practices observed - food items are covered, labelled, dated.
