Label of the spray bottle of sanitizer.
Obtain chlorine test strips to monitor the dishwasher sanitizer level.
Store in-use rags in sanitizer buckets.
Check temperature of equipment daily and record.
Ensure hot holding display unit is at 60C (empty during the time of the inspection).

No concern noted with the upcoming catering event ( hot dogs, fries, chicken strips, fruits and veg for 200-400 guests).
All catering has been for onsite dining. If catering is to be for offsite dining, ensure appropriate hot and cold holding equipment are used during transport.
General sanitation is satisfactory.
Food probe thermometer is accurate.
Dishwasher sanitizer is detected.
In-use cooking utensils are stored in buckets of ice water.
Handwashing stations are satisfactory.
