ALL OF THE OUTSTANDING ISSUES FROM THE PREVIOUS INSPECTED DATED NOV. 3, 2015 HAVE BEEN ADDRESSED AND CORRECTED.
-Bay doors are now smooth, non-absorbent and easy to clean.
-Large walk-in cooler has been cleaned and a new shatter-proof light bulb has been installed.
-Walls and ceiling in the Walk-in freezer have been scrubbed clean to remove paint chips.
-Weather-stripping has been installed underneath the receiving area door.
-All food items and articles are now stored off the floor.
-Sanitation of the floors, walls and food contact surfaces very good. Dedicated staff (sanitation supervisor) has been
assigned to cleaning/sanitizing duties. Checklists are in use to monitor compliance.

Liquid soap and paper towels available at all hand sinks.
Quats sanitizer at both sink dispensers tested 200 ppm
All work surfaces and machinery clean and well maintained.
Cooler and freezer temperatures are monitored and recorded twice daily.
Sanitation monitoring logs are up to date.
The facility is gluten free certified and also have third party food safety certification.

Note: Consultation with the operator re: using a new production room for cutting and packaging cholocate.
Hand wash sink provided near the entrance to the room. Once more hand sink available in the room.
Floors, walls and ceiling surfaces smooth, non-absorbent and easy to clean.
PLEASE PROVIDE DETAILED HANDLING AND SANITATION PROCEDURES FOR CUTTING/PACKAGING CHOCOLATES
OUTLINING EMPLOYEE HYGIENE AND EQUIPMENT SANITATION PROCEDURES.

FOLLOWING ITEMS MUST BE COMPLETED AT THE EARLIEST.

1. Revise the sanitation procedure checklist posted at the triple sink in consultation with Ecolab.
2. Remove old caulking and re-silicone the gaps behind cooler door in the small walk-in cooler
3. Thoroughly clean and sanitize interior surfaces of the large walk-in cooler, replace the compressor pan and re-caulk surfaces as required.
4. Recommended using swivel type lids on garbage bins to avoid touching the lids when throwing papers or other garbage.
5. Re-paint the ceiling in the large walk-in freezer using a cooler-grade paint.
