Observation (CORRECTED DURING INSPECTION): Tomato sauce in hot holding insert detected at 37C. It was held for less than one hour. This food item must be reheated to 74C before being put into an hot holding unit holding temperatures at 60C and above.
Corrective Action(s): Ensure to reheat food items to 74C first then put into a holding unit at 60C and above. Food being stored in the DANGER ZONE between 4C and 60C will grow bacteria which may lead to foodborne illness.
