Observation: High temperature dishwasher offline, not in use.
Corrective Action(s): High temperature dishwasher is to be repaired to provide a sanitizing cycle that meets or exceeds 71 C at dish level.

Until repaired all food served to customers is to be conducted using single use dishware and utensils only. No use of resuable mugs, dishware or cutlery.

Until repaired all food utensils and food equipment are to be cleaned and sanitized within the 3 compartment sinks.

Food equipment, food utensils and clean in place food contact surfaces must be manually cleaned and sanitized following the 4 step method;
1)clean surface of debris using warm water and detergent,
2)rinse surface with warm water,
3)immerse for 2 minutes or apply surface sanitizer solution 200 ppm Quaternary Ammonia,
4)allow surface of item to air dry before next use.

Observation (CORRECTED DURING INSPECTION): Back handsink obstructed with soiled dishware.
Corrective Action(s): Hand-washing stations are to kept fully accessible at all times to allow staff to conveniently and frequently wash their hands as needed.

Staff relocated dishware during inspection.

Observation: Door to back kitchen / office - door sweep has been chewed through at the corner allowing for pest entry.
Corrective Action(s): Replace door sweep.

Observation: Mouse droppings observed under 3 comparment sinks, behind organic waste bin, behind bun wheeled cart and inside front cabinets behind cup dispensers and under pop beverage dispenser.

Black residue observed on clean dishware storage shelf and dishwashing sinks drain board.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
