Observation (CORRECTED DURING INSPECTION): Noted host attached to at two compartment sink. Staff member unsure how to take the hose off. The hose is permitted to be used for cleaning the sink area only otherwise, the sink should be set up for warewashing and hand washing purposes. Staff need to be able to wash hands between handling 'dirty' and 'clean' food equipment. Soap and paper towel available.
Corrective Action(s): Ensure two compartment sink is set up for primarily warewashing and hand washing functions only. Staff member said manager is on his way and knows how to take off the hose part. Operator to send a picture to the undersigned otherwise a follow up inspection will be done within 1 week to confirm.

Comments

Premises had just open for operation. No food preparation/handling was taking place.
Good general sanitation. No obvious signs of pest activity noted at time of inspection.
Walk in cooler and drink cooler 4C. Walk in freezer -19C.
Prep cooler was unplugged overnight and was empty. Staff member had just turned it on. Ensure unit is at 4C before storing any perishable foods in it.
Hand wash station in the pizza prep area and washroom had soap, paper towel, hot and cold running water. See violation code 401 re: warewashing sinks.
All foods are made per order and served/delivered immediately (ie. no hot holding). Insulated bags used for deliveries.
All meats come in precooked and most toppings are precut/sliced.
Probe thermometer available on site to check internal temperature of foods. Ensure probe is sanitized between uses.
Quats in sprary bottles and at sanitizer source 200ppm. Test strips available.
Manual ware washing procedures reviewed at time of inspection – no concerns. Drain plugs available.
All stored foods appeared protected (ie. stored off the ground, covered, lights in food preparation areas had covers..etc)
Self closing hinges installed on staff washroom door
