Walk-in freezer at -18 C.
Thermometers for cold units - available; as well as an insert thermometer for food.
Food items are stored in insert containers with lids, dated, and labeled.
Hot holding units > 60 C.
Three compartment sink available for manual dishwashing. Quat sanitizer available (at 200 ppm).
High temperature dishwasher (stationary) achieved 71.9 C at the plate's level during the final rinse cycle.
Surface sanitizer available in red buckets & spray bottles (at 200 ppm of Quat).
