Observation: A small pool of standing water was observed behind the walk in freezer.
Corrective Action(s): Remove standing water to prevent pest from attracting. Monitor this area for standing water. If required, find a source of this standing water and fix it. Correct this by: April 30, 2021.

Temperature
Soups and other hot foods in the hot holding units were at or above 60C
Walk in cooler was at 4C or below
Walk in freezer was at -18 or below
Sandwich coolers were at 4C or below
Temperature log was available at up-to-date
Under-the-counter cooler was measured at 5.9C at the time of inspection. This cooler may have been in defrost cycle. Continue monitoring for temperature. The operator removed all foods in this cooler to working walk-in cooler as a precaution.
Thermometers available

Sanitation
Hand washing station was stocked with hot and cold running water, liquid soap and paper towel.
Excellent hand hygiene practice was noted from employees.
QUATS sanitizer was measured at 200 ppm as per test strips. Test strips available on site.
3 compartment sinks with drain plugs were available for manual dishwashing.
General sanitation is adequate
No sign of recent pest activity were evident at the time of inspection

Food Storage
Foods in coolers were adequately covered and labelled.
Inserts in sandwich coolers are covered after busy hours.
Food and other items are stored >15cm off the floor.

* A container of sanitizer with brushes used to dip in knives to sanitizer solution was removed from the front line. The container was not being used at the time of inspection. Do not use such container as knives won't have time to air dry and sanitizer can contaminate the sandwiches.
** COVID 19 inspection was completed. Separate COVID 19 check list has been forwarded to the operator.
