Observation: Food temperature in upright freezer measured at -10 degree C. Monitoring log checked and it has been around -10C to -11 C for the past week. Food is frozen and solid to the touch.
Corrective Action(s): Adjust the temperature so to ensure that stored food is maintained at or below -18C. Ensure to monitor the unit. Service or repair the unit if necessary.

Routine inspection

- Hand washing stations were maintained.
- Walk -in cooler measured at or below 4C. Food separation observed. Cooked food was covered and stored properly. Pizza prep cooler measured at or below 4 C. topping scoops cleaning and sanitizing discussed. Temp monitoring log maintained.
- All under counter coolers measure at or below 4C.
- QUAT 200-400 ppm available in spray bottles.
General sanitation is excellent. 3- Comp sink maintained and implements washed and stored properly.
- Lighting observed to be adequate.
- Mop sink maintained and cleaning supplies are well stock.
- Dry storage was clean and food stored above the floor.
- No obvious sign of pest activity at this date.
