Comments

-Upright cooler (back) was at 4C.
-Upright freezers were at -15C and -18C.
-Front sandwich cooler was at 4C.
-3 under counter coolers in the front service area were less than 4C.
-Front display cooler was at 4C.
-Accurate thermometers present in cold holding units.
-Temperatures are checked and recorded daily. On numerous occasions, temperatures exceeded critical limits (4C) and proper corrective actions were not carried out. Review with staff proper corrective actions to be carried out in the event critical limits are exceeded. Manual indicates if temperatures exceed 41F, take temperature of second item and if second item also exceeds 41F, set items aside.
-High temperature dishwasher had a final rinse temperature of 73C on the dish surface (minimum 71C required for proper sanitizing).
-Quats sanitizer dispenser was tested at 200ppm.
-Quats sanitizing solutions are changed every 2 hours (timed electronically) and were tested at 200ppm.
-Milk frothier properly disinfected with 200ppm Quats sanitizer.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Ice machine clean and well maintained. Ice scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods properly stored off the floor and protected from potential contamination.
-Facility serviced by a professional pest control operator on a regular basis. Reports by the pest control operator did not indicate any sings of infestation. No signs of pests noted at the time of inspection.
-General sanitation good at the time of inspection.
