Observation (CORRECTED DURING INSPECTION): Three door pizza prep cooler air temperature 46F and food temperature 46F (8C).
Corrective Action(s): Discarded potentially hazardous foods stored at >4C for >2 hours in this cooler. Do not use this cooler to store any potentially hazardous foods (meats, sausage, sauces, cooked vegetables, etc.) until it can keep them at 4 C/40 F or colder. Other coolers are at satisfactory temperature.

Observation (CORRECTED DURING INSPECTION): Newspaper is in direct contact with produce. Newspaper has ink and could contaminate food.

Observation: Evidence of mice pest inside kitchen. Droppings noted. Monitoring traps are empty. Food is in pest proof containers. Monthly pest contract in place.
Corrective Action(s): Premises to be free of pests. Clean up mouse droppings and continue with licenced pest control and monitoring. If new activity noted, determine where they are entering. Keep door closed. Seal all holes. Continue to keep food in pest proof containers. Provide Fraser Health with a copy of your latest pest control report.

Comments

Walk in and prep cooler by wall - air temperatures at 4 C or colder.
3 door prep cooler - Fan is used behind this cooler. Temperature above 4 C/40F. This cooler may need to be repaired - see above.
Defrosting frozen food in cooler.
Cooking/reheating in pizza oven.
Produce is washed on site.
Hand washing sink that is used is sink at back near the double sink. This sink has hot/cold water, liquid soap, and paper towels.
Hand washing sink in the front prep area is not being used as it is slow to drain. Recommend this sink be fixed and provided with liquid soap, hot/cold water, and paper towels so it can be used for hand washing as it is in a convenient location for staff to use to wash hands.
Manager starts at 5pm today and has Food Safe (certificate posted exp 2024). Renew certificates prior to expiry. At least one person per shift is to have a valid FoodSafe level 1 certificate.
Chlorine bleach is available to sanitize utensils and counters/food contact surfaces. Use 1 tsp domestic bleach in 1 liter of water.
Wiping cloths to be stored in sanitizing solution - made fresh during inspection and measured at 100ppm (100-200ppm required).
Cleaning - see above. Follow a written routine cleaning schedule.
Pest control - see above. Keep door shut (suggest you provide screen door or fan).
Follow up inspection required.
