Routine Inspection:
Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All coolers maintained at or below 4 degrees Celsius.
All freezers maintained below -18 degrees Celsius.
Bleach sanitizer in spray bottle and in bucket = 200 ppm. Wiping cloth stored in sanitizer solution - good.
High temperature dishwasher sanitizing with 73.4 degrees Celsius at dish level after final rinse cycle.
General food storage practices satisfactory:
- All food items covered and protected from contamination.
- All food items stored off the floor.
- Dry storage items covered and organized.
- Meats stored on bottom shelf in walk-in cooler.
No indication of pest activity at the time of inspection - good!
Permit to Operate posted.
Dining area clean.

In addition to the violations above, the following requires your attention:
- Continue monitoring pest activity daily.
- Continue cleaning floors of storage room on a regular basis.
- Start recording temperatures of all coolers and freezers to ensure equipment is working properly for safe food storage.
