Observation: - Walk in cooler missing working thermometer. The staff provided working thermometer inside the cooler at the time of the inspection.
- Two display meat coolers missing working thermometer.
Corrective Action(s): Immediately provide working thermometer inside all refrigeration units.

Comments

- General sanitation satisfactory.
- Main handwashing station supplied with hot/cold running water, soap, paper towels. Do not put garbage bin in front of the main handwashing station.
- Two compartment sink available for manual warewashing. Updated Two compartment warewashing poster provided at the time of the inspection. Sanitizer available at 100ppm chlorine bleach concentration.
- Surface sanitizer available in designated buckets at two stations, measured at 100ppm chlorine bleach concentration with wiping rags.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity.
- Random audits conducted for food condition, packaging, expiration/best before dates. Satisfactory.

Temperature control:
- All display coolers (store, meat section) < or = 4C
- All upright freezers < or = -18C
- Walk in cooler = 4C
- All display chest freezers < or = -18C
- Display freezer = -18C
- Daily temperature log available and up to date.
