Handsinks were supplied with liquid soap, hot and cold running water, and paper towels in the kitchen and staff washrooms.
Rinse sink was operational.
Walk-in-cooler and other refrigeration units were at or below 4 degrees C.
Walk-in-freezer and other freezers were at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
Time-stamps were in place for the shell eggs and condiments using a 2 and 4 hour rule with respect to holding the food at ambient temperature before it is discarded. Food was not past the time to discard the food marked on the time stamp.
100 ppm chlorine sanitizer was available inside the sanitizing pails with wiping cloths.
200 ppm QUATS sanitizer was available inside the sanitizer spray bottle and from the dispenser.
Ice machine and ice bin were both in a clean condition and ice scoop was stored separately in a clean container.
Signs of recent pest activity were not present at the time of inspection.
Dishwasher final rinse chlorine sanitizer residual was at 100 ppm (minimal 50 ppm required) at the plate. Note: This dishwasher was re-serviced by a technician during the inspection as the Manager had already called them before the inspection.
Assistant Manager on shift had a valid FOODSAFE Level certificate. Information on the FOODSAFE website (www.FOODSAFE.ca) regarding the expiration of FOODSAFE Level 1 certificates was discussed with both the Manager and Assistant Manager whereas FOODSAFE Level 1 certificates expire 5 years from the date of issuance as noted on the certificates and certificates issued prior to July 29, 2013 have expired on July 29, 2018.
