Note:
- Make sure to have at least three quats spray bottles in the kitchen prep areas for easy access and use. These need to be kept in consistent and obvious locations so staff to use and the inspector to check.
- Recommend implementing a defined and timed system for cooling cooked foods, especially the proteins. Use of timers with alarms to notify staff when products are cool enough to move into the cooler will help keep them safer and reduce re-growth of microbes.

Clam shell prep cooler lids need to be kept closed as much as possible to control food temps in the top inserts.
