Observation (CORRECTED DURING INSPECTION): Container of bean sprouts, mint, and lime stored in water was found on the prep counter at ambient temperature. Internal temperature measured at 9C.
Corrective Action(s): Ensure that cold potentially hazardous foods are maintained at 4 degrees C or less to limit growth of pathogens and/or toxins. Foods may be placed in containers that are fully immersed in ice to help maintain these temperatures. Operator moved it into the cooler.

Observation (CORRECTED DURING INSPECTION): 1) Containers of bean sprouts, green onions, and onions on top of the prep counter was not properly covered
2) Containers of shrimp and fish in the prep cooler was not properly covered
Corrective Action(s): Ensure all food containers are covered properly with a lid or covering. Operator used saran wrap to cover all food containers during the inspection.

Routine inspection conducted:
- Hand washing stations equipped with hot/cold running water, disposable paper towels and hand soap
- All cooling units are at 4C or below
- Freezer units are at -18C or below
- No hot holding at the time of the inspection
- 2 compartment sink available with sink plugs
- Low temp dishwasher measured at 50 ppm chlorine
- Chlorine bleach sanitizer buckets with wiping clothes inside measured at 100-200 ppm
- Chlorine test strips available
- Ice machine is clean, ice scoop is stored in a food grade container outside the machine
- Deli slicer stored in a sanitary manner
- No signs of pest activity
- FOODSAFE certificates of operators are posted on the wall, expiry dated 2023
- Permit is posted in a visible location
- General sanitation is satisfactory
