Observation (CORRECTED DURING INSPECTION): QUATS sanitizer not prepared at front service area. Spray bottle at back measured at 50 ppm QUATS concentration. Staff stated that fresh sanitizer was being prepared after the lunch rush. Staff prepared fresh sanitizer solution during time of inspection which measured at 200 ppm QUATS concentration during time of inspection.
Corrective Action(s): Ensure QUATS sanitizer is available at the front service area at 200 ppm QUATS concentration at all times to sanitize food contact surfaces, equipment and utensils. Change QUATS sanitizer frequently and check the strength with the available test strips on site.

Observation: Few flies observed in the preparation area. Staff stated that a pest control company is not contracted. A small fly trap is observed on site in the back preparation area.
Corrective Action(s): Monitor fly population and contact pest control company if the population increases. Install sticky fly traps in the back, away from food, to reduce fly population.
