306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following areas require cleaning:
- Frozen blueberries on the ground in walk-in freezer by back right corner.
- Creamers fallen on the floor in walk-in cooler by front left corner.
- Strawberry syrup spilled onto boxes of sugar and on the floor in dry storage room upstairs. Streaks of syrup dragged from workers feet were noted on the floor in stairwells and hallways.
- Water pooling around dishwasher in dishpit area.
Corrective Action(s): Clean and sanitize the above mentioned areas. Removing food debris and any pooling of water will help to minimize the presence of pests.

Monitor the dishpit area and attempt to locate the source of pooling water.

Observation: Dishwasher is not achieving final rinse temperature of 71C at the plate to maintain sanitation. Probe thermometer indicated 69.3C after 3 attempts.
Corrective Action(s): Do not use dishwasher. Facility must perform manual warewashing using 3 compartment sink method only until dishwasher can be serviced to maintain a sanitizing cycle of either 71C at the plate.

- Hot held items (meat and egg patties) ranged from 67C-73C

- Handsinks supplied with hot+cold water, liquid soap and paper towels
- 200ppm QUATS sanitizer measured from dispenser and spray bottles. Test strips available on site
- 3 compartment sink available for manual warewashing. Facility mainly relies on this method for cleaning and sanitizing, followed by the dishwasher for a final round of sanitizing. (See violation 308 in regards to dishwasher)
- All stored and hot held foods are time and date tracked; items are tossed if not used before the indicated time and date
- First in first out (FIFO) process being practiced for all stored food
- No incompatible storage of food throughout the facility
- Griddles are steam cleaned every 15-30 minutes then deep cleaned at the end of the day as per manufacturer's instructions
- Tongs and serving utensils are cleaned and sanitized every 4 hours. Colour labeled to prevent cross-contamination
- Coffee/espresso machines are cleaned and sanitized daily at the end of the day. Ice cream machine cleaned and sanitized weekly (all are as per manufacturer's instructions)
- Ice machine and ice wand kept in sanitary condition
- Vent hood condition was satisfactory. Next service date will be by the end of this month (July 2021)
- Pest control devices noted on site however no signs of pests at time of inspection. Service is provided monthly by Ecolab
- Last service indicated a broken tile by the back door that was allowing the entry of ants. Store manager indicated that Ecolab is already in the process of repairing the tile
- Staff on site are FOODSAFE certified
- Health permit posted in conspicuous location
