Observation: 1) Double stacking of food in the front undercounter cooler.
2) Box of spinach stored directly on the floors in the main handwashing station.
Corrective Action(s): 1) Cover all food with plastic wraps or lids.
2) Move the spinach on the prep table or on shelves. Do not store food directly on the floor.

Comments

- General sanitation satisfactory.
- Handwashing station (back) supplied with hot/cold running water, soap, paper towels.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Surface sanitizer available in spray bottles at 100ppm chlorine concentration. Available in the main kitchen, bar, customer area.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity. A third party pest control company through the mall management. Ensure to keep copies of all inspection reports on site for review during the next routine inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- All hot holding units > 60C.
- Working thermometers available inside all coolers/freezers.
- Begin daily temperature log for all coolers.
