Observation: General cleaning required.
Corrective Action(s): Get the exhaust hood serviced (ensure that the cleaning company puts a sticker on the hood to indicate the next service date). There's a lot of food debris under the rubber floor mats in the kitchen. Operator mentioned that the mats are removed and the floor cleaned at the end of the night. Clean behind equipment.
