Observation (CORRECTED DURING INSPECTION): Two large trays of cooked custard cooling next to the dishwasher at time of inspection -internal temperature at 37 deg C and worker indicates it has been there over 2 hours with another planned one hour
Corrective Action(s): Improper cooling and location to store it next to the dishwasher area due to the splashzone -discarded the two trays.

Submit the Food Safety Plan for custard indicates it was made in house. Operator could not find the Food Safety Plan

Proper cooling involves the following steps:

Step 1:
60 deg C to 20 deg C within 2 hours using wide shallow pans or small containers
Step 2:
20 deg C to 4 deeg C within 4 hours placing it in the fridge

Observation (CORRECTED DURING INSPECTION): Disposable cups used for bulk food containers
Corrective Action(s): Use only washable scoops for bulk foods -disposable cups will deteriorate and contaminate the foods

Observation: Business has changed the name to "Sweet Puffin" -operator indicates the menu/owner has not changed

Two of the three washroom used for storage however the toilets and sinks still present
Corrective Action(s): Provided a new application form to fill out

Submit the new menu reflecting the new name along with the Food Safety Plan that covers every menu item

Disconnect and cover the sink/toilets if these rooms will be used for storage of goods -keep goods off the floor -place shelves there
