Observation:
1. Inside of dishwasher has accumulation of grime.
2. Inside of ice machine (on white lip) has mould.
Corrective Action(s):
1. Clean inside of dishwasher, including all parts.
2. Clean inside of ice machine as per manufacturer's instructions.

Ensure to follow your sanitation plan for cleaning the dishwasher and ice machine on a regular basis.

Routine Inspection:

Kitchen:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers (walk-in, sandwich prep, undercounter) maintained at or below 4 degrees Celsius.
Freezers (chest, upright) maintained below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- Low temperature dishwasher sanitizing with a concentration of 50 ppm chlorine.
- Meat slicer and potato slicer/masher maintained in a sanitary condition.
- All food items covered and protected from contamination.
- Food in dry storage area and inside of all cold storage units well organized.
- Concentration of chlorine sanitizer in spray bottle = 200 ppm.

Bar:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Glass washer sanitizing with a concentration of 50 ppm chlorine.
- Ice scoops stored in designated containers for ice wells.

Overall:
- Staff washroom clean and hand sink fully equipped with liquid soap, paper towels and hot/cold running water.
- Note: exhaust canopy scheduled to be cleaned tonight.
- Pest control in place.

Note: Facility was closed for 7 weeks due to a fresh water pipe burst. No kitchen appliances/equipment or food storage areas were affected from pipe burst, however the kitchen floor was flooded. All affected areas have been dried and restored. No mould damage found at the time of inspection.
