Observation:
The plastic ice scoop has duct tape on the handle and scoop area. Duct tape is NOT food grade, washable, or durable. Ice that touches the duct tape could become contaminated with tape debris or pathogens.
Corrective Action(s):
Immediately throw away the ice scoop and purchase a new one so it is durabe, made of food grade material, sealed, and washable.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation:
During the inspection the two staff members present did NOT possess the FoodSafe Level 1 certificate. There must be at least one staff member working at all times that possesses the certificate so proper food handling practices are being followed.
Corrective Action(s):
Have staff enroll into the next available course to obtain the certificate. Operator shall ensure there is always one person working that possesses the certificate.

Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] (Small fridges in the front area storing milk products were 6C. The employee explained that they monitor for temperature at the start of the shift.

Corrective Action: Directed the employee to lower the temperature of fridges and monitor temperature more frequently since the fridges open & close regularly. Potentially hazardous food such as milk must be stored at 4C or below.)

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Observed dirty cloths left on countertops. Employee explained that the cloths get replaced when they are visibly dirty.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -21C; thermometers present; and temperatures recorded daily.
- High temperature dishwasher has a rinse cycle temperature of 79C at the plate's surface as per max/min thermometer. Staff are FAILING to record the "Rinse Temperature" gauge (on the dishwasher) daily as per temperature recording sheets. The temperature should read 82C or hotter on the gauge before using.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] above 200ppm. Wiping cloths are being changed every 2-3 hours with new ones. The soiled cloths are rinsed and socked in a bucket of bleach and water solution, [Cl2] above 200ppm, when not in use .
- General sanitation level is good. No signs of pests.
- All foods stored in food grade containers; covered; labeled; date coded; and 6" off the floor on shelves.
- No expired foods for sale or in use. FIFO rules followed.
- Hand washing done properly by staff.
