Observation: REPEAT VIOLATION: Cleaning has not been done properly for the following areas:
- Food debris observed underneath equipment.
- Dust accumulation underneath back storage shelving unit.
- Soiled racks in walk-in cooler.
Corrective Action(s): Ensure these areas are cleaned again. Operator should double check the cleanliness after staff does cleaning.

Comments

Following incompliance items from previous report were addressed/corrected:
- Savory bun cooler was repaired and ambient temperature measured at 4C or below.
- Savory buns are stored in a functional cooler that is capable of maintaining temperature of 4C or below.
- Prep cooler has been cleaned.
- Top of vent unit cleaned - ensure other gaps and areas collecting dust are cleaned on a regular basis.
- Broken cooler is cleaned - Operator will have a new prep cooler and cutting board.
- Ceiling light fixture cover is available - operator to install it after busy hours today.
- Door seals for walk-in cooler have been replaced.
- Back door was closed at the time of inspection.
- Shelving racks by the back door are cleaned.
- Roller containers are cleaned.

Overall improvement in sanitation but some areas were missed. Ensure to have additional cleaning done for areas noted in the violation section.
