Cleaning and organization has greatly improved in the following areas:
1) Inside walk in cooler and walk in freezer
2) The nozzles of all spray sanitizer bottles
3) The table across the dishwasher no longer has the filthy cardboard taped to it
Carton of eggs at room temperature are now time tracked --> Chef had put a note indicating what time the eggs were taken out. Discussed with staff that the maximum time limit is 2 hours (any eggs not used after 2 hours must be discarded, so make sure to only take out enough that you will use in a 2 hour period).
All foods in walk in cooler are now stored off the floor - good
Temperature logs available
FoodSafe certificate for staff member on site was available. Ensure that each shift has at least one person on site who can verify that they have their FoodSafe Certification.
