Observation (CORRECTED DURING INSPECTION): Minestrone soup in the walk in cooler had a date stamp of 10:40 am. During the inspection at 2:15 pm, the soup was stirred and probed at 24 degrees Celsius. Soup must always be cooled from 60 C to 20 C in two hours or less and from 20 C to 4 C in 4 hours or less.
Corrective Action(s): Reheated during the inspection. In the future use: a) Ice wands b) Ice bath c) Shallow containers.
In the future any improperly cooled foods will be discarded.

Observation: Food probed in the grill cooler was at 17 C.
Corrective Action(s): Adjust/ repair this cooler so that it maintains a temperature of 4 C or colder. Technician called during the inspection.

Comments

-Ensure that the dishwasher is checked daily and that records are kept.
The dishwasher chlorine level appeared to be just under 50 ppm on the chlorine test strips. The sanitizer bucket was replaced during the inspection and it reached 50 ppm.
Hand sinks supplied with hot and cold water, soap and paper towels.
All coolers, except for the one mentioned above were < 4 C.
Hot held foods were > 60 C.
No pests observed during the inspection. Pest control is coming on site monthly.
General sanitation was satisfactory.
