Observation: Pink mold was found inside the upper part of ice machine.
Corrective Action(s): The ice machine should be cleaned as required. Remove the ice and clean and sanitize the inside of the ice machine as per manufacturer's instructions.

Observation (CORRECTED DURING INSPECTION): The dishwasher was measured at 0 ppm chlorine twice. Manager reported that there of sanitizer concentration was being monitored daily in the morning but there were no records.
Corrective Action(s): Ensure to fill up the sanitizer in the dishwasher when low. Monitor the chlorine concentration to ensure 100 ppm is met to properly sanitize the utensils by keep a record. Sanitizer was filled and re-tested at 100 ppm.

Observation: Multiple areas in the premises appeared uncleaned (eg. the dry food storage areas, underneath the conveyor and above, in the kitchen areas in hard to reach places, eg. the gaskets and doors of coolers and inside and outside.) Clean areas will prevent attraction of pests.
Corrective Action(s): Ensure the noted areas above are cleaned.

Comments

General Comments:
-Handwashing sinks equipped with liquid soap, paper towels and hot and cold running water.
-QUATS sanitizer measuring at 200 ppm at the dishwashing sink (back).
-Bleach sanitizer for towels measured at 100 ppm
-All coolers measured at 4 deg. C or below
-All freezers noted were -18 deg. C or lower
-Time tracking in place. It was noted that a container a sliced tomatoes did not bear a time stamp and was discarded by staff. 2 packages of sliced cheese time stamped for 2:30 pm Jan 31, 2019. Manager reported that the cheese can be left at room temperature for 8 hours. The on-site manager was not able to locate the section related to the cheese in the food safety and a head office personel was able to help confirm that the cheese can be held at room temperature for 24 hours.
-Pest control contract was in place. Services were provided monthly. Numerous traps were noted: Glue traps, catch traps, snap traps.
-No rodent droppings noted.
-Report on Jan 17, 2019 indicated that rodents were sighted by a driver (sightings upstairs by dry storage area).
