Observation (CORRECTED DURING INSPECTION): Cleaning sponge and brush had visible dark debris and mould on basket that also had mould.
Corrective Action(s): Directed staff to discard sponge, use new ones and wash basket holding these washing utensils.

Dishwasher replaced with another high temp unit - Ecomiser unit; will verify if NSF approved.
Measured at 78.8C at plate; temperature record commenced since Tuesday when unit replacement occurred.
Max mode thermometer obtained for testing dishwasher.
Continue to take temperatures and corrective actions accordingly if there are any issues in the future.
General sanitation is satisfactory but need to clean rice cooker shelf again.
Dry storage kept tidy and organized.

Pending issues by next routine - replace sink caulking and close 2 inch gap in the back screen door.
Operator sent sushi rice for lab testing and is expected to receive results in a week. Please submit lab results along with recipe to health unit for review.
