Observation: Sticky traps in the dry storage room were soiled with insects and other pests. Unable to identify the species of pests.
Corrective Action(s): Replace the sticky traps with new ones. As part of your pest control management system, sticky traps must be replaced on a regular basis.

Observation: Standing water in bucket underneath the dishwasher was observed at the time of the inspection. The operator stated that this was placed to collect water leak.
Corrective Action(s): Remove the standing water as it may attract pests.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up of grease and dirt in the following areas:
- on floors throughout the kitchen, especially in hard to reach areas
- underneath the sinks
- on doors of the upright coolers
- inside the prep cooler
- in the dry storage room
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule, especially in hard to reach areas (ie behind coolers, prep tables).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The dishwasher was leaking. There was a bucket to collect the water underneath the dishwasher at the time of the inspection.
Corrective Action(s): Fix the dishwasher to ensure that there is no water leaks.
Correct by: One week.

Comments

- General sanitation needs improvement. See violation section above.
- All handwashing stations (front, back) supplied with hot/cold running water, soap, and paper towels.
- High temperature dishwasher achieved 73C at the plate's level during the final rinse cycle.
- Two compartment sink (kitchen) available for manual dishwashing.
- Dry storage area has adequate space and wire racks. All boxes and food items must be stored min 15cm off the floor to facilitate cleaning.
- No signs of pest activity at the time of the inspection. The operator implements own pest control management system.
- FOODSAFE trained on duty. Verified at the time of the inspection.

Temperature Control:
- All coolers (two upright, two prep, beverage display): < or = 4C
- All freezers (one upright, one undercounter): < or = -18C
- Hotholding units (rice cookers) > 60C. Ensure to keep rice scoops in ice water.
- Thermometers available in all refrigeration units.
- Daily temperature logs kept up to date and available.
