Observation (CORRECTED DURING INSPECTION): - Blade guard for meat slicer observed to have accumulation of old food residue (not in use at time of inspection).
- Bellini machine is only cleaned with hot water.
Corrective Action(s): - Ensure meat slicer is thoroughly cleaned and sanitized after each use.
- All food contact surfaces must be washed, rinsed, then sanitized with an approved sanitizer unless manufacturer's instructions state otherwise.

Comments

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Low-temperature chemical dishwasher dispensed 100 ppm chlorine to dish surface, detected after rinse cycle
- Glasswasher located at bar dispensed 12.5 ppm iodine to glass surface
- Quats sanitizer solution available at 200 ppm throughout facility
- Test strips available for monitoring all sanitizer concentrations
- All coolers were maintaining temperatures of 4C or colder. Food items held in inserts at line coolers were measured to be at 4C or colder - good.
- Walk-in freezer measured to be -23C
- All hot held food items were measured to be above 60C
- Accurate thermometers available for use. In-use utensils hold held above 60C or stored in ice - good.
- Food storage practices very good. All food stored off the floor, covered, and labelled. Good separation of raw and ready-to-eat food items.
- Ventilation canopy and ice machine maintained in sanitary conditions
- General sanitation good. Mop closet maintained in sanitary condition.
- Pest control in place; no signs of pest activity noted at time of inspection
- Temperature records well maintained
