Observation: Unused or rarely used baking sheets and racks have mice droppings and built up flour still on them. Hard to reach areas behind equipment (dough mixer, under counter coolers, etc) throughout the premises have droppings.
Corrective Action(s): A thorough and deep clean is required through out the premises to remove all droppings and flour and debris.
