Observation (CORRECTED DURING INSPECTION): No prepared chlorine sanitizer buckets available on-site at the front and back area of kitchen.
Corrective Action(s): Prepare chlorine sanitizer buckets to measure between 100-200ppm to ensure proper food contact surfaces. Chlorine sanitizer buckets must be prepared at the time of operation and changed every 2 hours.

Observation (CORRECTED DURING INSPECTION): Handwashing sink lack paper towels.
Corrective Action(s): Ensure handwashing sink is well equipped with hot and cold running water, liquid soap, and paper towles at all times to ensure proper hand hygiene.

Observation: Observed exposed lettuce to be stored in the stand-up cooler in direct contact with surface of cooler adjacent the dry storage area. Observed several food containers to be uncovered in the preparation coolers and stand-up coolers.

Observed single-use scoops to be stored directly inside spice containers. THIS IS A REPEAT VIOLATION. PICTURES TAKEN.
Corrective Action(s): Lettuce should be stored in containers not in direct contact with surface of inside of cooler. Remove all single-use containers from dry spice containers. Scoops must be used to dispense dry goods and handles not in direct contact with dry spice. Corrected by: April 28, 2023.

Observation: Rodent droppings observed underneath shelving unit and on the corner near the first back door. Rodent droppings observed underneath and behind the chest freezer in the dry storage area.

2-compartment sink available. High-temperature dishwasher measured at 76.8C final rinse temperature.
Prep coolers and stand-up coolers measured at 4C or lower. Chest freezer measured at -18C.
