Observation: Observed exposed lettuce to be stored in the stand-up cooler in direct contact with surface of cooler adjacent the dry storage area. Observed several food containers to be uncovered in the preparation coolers and stand-up coolers.
Observed single-use scoops to be stored directly inside spice containers. THIS IS A REPEAT VIOLATION. PICTURES TAKEN.
Corrective Action(s): Lettuce should be stored in containers not in direct contact with surface of inside of cooler. Remove all single-use containers from dry spice containers. Scoops must be used to dispense dry goods and handles not in direct contact with dry spice. Corrected by: April 28, 2023.

Observation: Rodent droppings observed underneath shelving unit and on the corner near the first back door. Rodent droppings observed underneath and behind the chest freezer in the dry storage area.

Observation: Heavy food debris and/or grease build-up underneath cookline, preparation tables, coolers, shelving units in dry storage area, exhaust hood vents.
Corrective Action(s): Clean and sanitize the aformentioned items. Review facility's Sanitation Plan. Daily and thorough cleaning underneath hard to reach areas must be conducted to prevent build-up of grease and food debris. Corrected by: April 28, 2023.
