Observation: Droppings found on the shelving in between the hand sink and the walk in cooler. One dead mouse was found in a trap underneath the kitchen hand sink.
Corrective Action(s): Clean by tomorrow. Have a pest control company come on site within one week.

Comments

All coolers were < 4 C.
Freezers were < -18 C.
Dishwasher final sanitizing rinse cycle had 100 ppm chlorine at the plate level.
Bleach was at 100 ppm.
Food stored in pest proof containers.
Discussed cooling soups. Ensure that soup is cooled from 60 C to 20 C within 2 hours or less and from 20 C to 4 C within 4 hours or less. An ice wand would help in cooling soup properly.
