Observation (CORRECTED DURING INSPECTION): 1. Observed a few items held at room temperature

-Operator advised that the items were taken out during busy lunch time for convenience and stayed at room temperature for less than 2 hours
2. Observed meat in prep cooler insert to be at 14-17 C
-Insert door was propped open for convenience; cooler temperature in the bottom compartment at 0-2 C

Corrective Action(s): 1. Required operator to time stamp when taken out of the cooler and once the busy time is over, put all cold potentially hazardous food back into the cooler.
2. Required operator to discard meat immediately. Operator must ensure that the door is kept closed to keep all cold potentially hazardous food cold (4 C or lower)

Overall sanitation is okay; Small parts of hard to reach areas need attention. Ensure to perform thorough cleaning minimum once in two weeks
All hand sinks stocked with liquid soap and paper towel; hot and cold running water available at all sinks
Chlorine sanitizer buckets located at FOH and BOH; all buckets detected with 100 ppm of residual chlorine
Hot holding units at front service desk at 60 C or higher; operator must ensure to stir the food regularly to provide adequate heating for all parts of food; rice warmers at 60 C or higher
Walk-in cooler at 4 C or lower; beverage cooler at 4 C or lower; prep cooler at 4 C or lower; up right two-door freezer at -18 C or lower
Ice machine kept in sanitary condition
No sign of pests noted at the time of inspection
