Observation (CORRECTED DURING INSPECTION): Can opener blade observed to have an accumulation of food debris.
Corrective Action(s): Clean and sanitize the aforementioned items. Ensure that the can opener blade is cleaned and sanitized after each use to prevent direct contamination.

Observation: Built-up of food debris, single-use containers, and grease observed underneath the heavy equipment (e.g.: gas stoves and deep fryers) and stainless worktables. Operator informed that deep cleaning underneath the major equipment are done every 4 months. THIS IS A REPEAT VIOLATION.
Corrective Action(s): Clean and disinfect the aforementioned areas to prevent possible pest harbourage. Implement daily cleaning procedures for cleaning underneath the major equipment within the kitchen area. Deep cleaning underneath major equipment every 4 months is not adequate to prevent accumulation of food debris, grease, and single-use containers. Corrected by: Today

Comments

Routine Inspection conducted today.
Communicable Disease compliance conducted. Hand sanitizers and hand sanitation signs present in self-serve station (coffee/tea dispensing machines).

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs sanitizing buckets and dispenser measured at 200ppm. High-temperature dishwasher measured at 73.8C at the plate-level. 3-compartment sink available.
Prep coolers, under counter coolers, display coolers, stand-up coolers, and walk-in coolers measured at 4C or lower. Stand-up freezers, chest freezer, and walk-in freezer measured at -18C or lower. No hot-holding of food observed at the time of inspection. Temperature logs are well maintained. Temperature logs shows refrigeration and hot-holding units adheres to temperature health requirements.
Knives are stored under ice on the preparation line. Single-use containers being used at the time of inspection during the pandemic.
Ice machine in sanitary condition.
Food stored at least 6 inches off the floor, exhaust hood in sanitary condition, and chemicals are stored away from food and food preparation areas.
No signs of pests observed. Pest control company contracted weekly by "Terminix Canada." Latest pest report on August 10, 2021 noted that there were no rodent, flies, or cockroach activity within the kitchen area.

All outstanding infractions have been corrected in report#SCHO-BYKUF5:
-All frozen raw meat are stored below all ready-to-foods (e.g.: ice cream bars and popsicles.)

NOTE: Ensure that a daily cleaning schedule of underneath the major equipment is developed and implemented to prevent built-up of food debris, grease, and single-use containers that may attract pests.

Overall, facility is well organized.
