Observation (CORRECTED DURING INSPECTION): Milkshake mixer is being cleaned with a cleaner /disinfectant that is not suitable for cleaning and sanitizing food equipment (read label and reviewed with operator - 10 minute contact time and requires a potable water rinse afterwards).
Corrective Action(s): Use a dishwashing detergent to wash all clean in place food equipment and food contact surfaces, rinse with plain water, sanitize using a sanitizer such as 1 tsp plain (unscented) domestic bleach in 1 litre of water (100-200ppm chlorine) and soak for 2 minutes or let air dry. Coolers are all keeping food at 4 C or colder. All coolers are to have accurate indicating thermometers - replace if needed.
Keep daily records of temperature checks and chlorine checks for dishwasher.
No raw eggs on menu.
Receipts are available for salmon and cod.
Hand washing sinks (main kitchen, prep room, and washroom) all have liquid soap and paper towels.
Sanitizer for milkshake and other food contact surfaces - see above.
Dishwasher has a final sanitizing rinse - 50ppm chlorine detected on the plate after final cycle.
