Observation: Food equipment noted being stored on cardboard in dry storage area.
Corrective Action(s): Remove cardboard as it is not an acceptable surface. It absorbs moisture and cannot be cleaned. Store food equipment on clean, washable surfaces.

Comments

General sanitation is satisfactory although some attention is needed in hard to reach areas such as under equipment.
Liquid soap and paper towel were available at handwashing stations
Walk in cooler was at 3C Walk in freezer was at -18C. Temperatures are being monitored and recorded twice daily.
Under counter coolers were 4C
Hot holding was >60C (burger patties 72C, chicken patties 64C)
Sanitizer (100ppm) was present in the third sink for sanitizing dishes.
Wiping cloths were stored in sanitizer solution (100 ppm Chlorine). Staff were familiar with frequency of replenishing sanitizer solution as per sanitation plan. Ensure solution is changed more frequently if water appears dirty.
No signs of pest activity noted.
