Chlorine bleach sanitizer is used to sanitize food equipment, utensils (tongs, bowls, etc.) and surfaces such as counters and cutting boards.
Reviewed procedures. 100ppm chlorine detected in sanitizing solution - good (100-200ppm required).
Wash, rinse, sanitize (2 minutes), and air dry.
Cheese and food storage bins are washed, rinsed, sanitized when empty and before re-filling.
Food storage bins - use food grade containers as discussed. If using in microwave, use containers that are safe in the microwave.
Hand washing stations have liquid soap and paper towels.
Operator has Food Safe certification.
