Observation (CORRECTED DURING INSPECTION): Perforated pans, fries scoopers and a tong used for coating fries with flavoring is cleaned and sanitized once a day. Food contact surfaces under the heat lamp was measured in between 25-45C. Reviewed the sanitation plan on site. Information on cleaning frequency was not available. Utensils and other food contact surfaces that are in continuos use must be cleaned and sanitized every 4 hours.

Observation: Observed dried rodent droppings next to the cabinet freezer.
Corrective Action(s): 1. Soak droppings with 100 ppm bleach sanitizer solution for 10-15 minutes. Pick up droppings with paper towels.
2. Clean and sanitize areas impacted by rodent droppings.

All freezers measured at -18C or less.

QUATs sanitizer measured at 200 ppm as per test strips.
