Observation: Upright glass door cooler located next to the ice maker registered 7-8 degrees C at the time of inspection. Ice build-up noted on the fan unit.
Corrective Action(s): Repair or service this cooler IMMEDIATELY so that it is capable of maitaining foods and beverages at 4 degrees C or below.
Relocate all milk and perishable food items to another cooler in the interim.

Comments

* Ensure cold water in the dipper well is running at all times to ensure scoops are maintained in a sanitary condition.
* Clean the fan unit in the main line cooler across from the grill to remove mould and debris build up. (July 28, 2016).
* Ensure fan covers in the walk-in cooler are kept clean at all times.
* Provide liquid soap in wall mounted dispensers at the sink located near the ice cream freezer.
* Clean spilled dry food items from underneath the dry storage shelves. (By July 28, 2016).
* Buckets containing soapy water and/or sanitizer must be labelled for contents. Do not mix detergent and sanitizer.

Walk-in cooler registered 1.3 degrees C.
Walk-in freezer registered -20 degrees C.
Line cooler across from the grill at 4 C or below.
Drawer coolers underneath the grill below 4 degrees C.
Salad preparation cooler below 4 C.
Hot holding of soups and gravies registered above 60 degrees C.
Dishwasher final rinse tested 50 ppm at the plate surface.
D10 Quats sanitizer at the dispenser tested 200 ppm.
Spray bottles of sanitizer tested quats at 200 ppm.
General sanitation is satisfactory.
Temperature logs are up to date.
