301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1) One piece of ice from the ice machine was observed to have black debris on it. Other pieces of ice did not appear to have black debirs. 2) An apron was left on top of the cutting board that was used to cut raw chicken (many pieces of raw chicken were still on the cutting board).
Corrective Action(s): 1) Clean the ice machine properly to ensure the lines are clean and ice produced will be free of debris. 2) Always clean and sanitize the cutting board after use, especially after handling raw chicken. If staff is busy, at last place the cutting board in dishpit and never place aprons on top of the used cutting board when staffs will be wearing it again. Directed staff to clean and sanitize the cutting boards.

Observation (CORRECTED DURING INSPECTION): A rack of dirty dishes placed on top of the garbage can was placed in front of the kitchen handsink, obstructing access.
Corrective Action(s): Please remember that ALL handwashing stations must be accessible so do not place anything inside the sink or in front of it.

Observation: Several food items in the prep cooler and standup freezer were not covered. Time of inspection was between lunch and dinner service (3pm).
Corrective Action(s): Remember to cover food when not in use.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Small fridge under fryer station is observed to have grease build up. 2) Lots of rice observed on the floor of small room next to dishwasher. 3) Sushi bar kitchen floor had water and fish spill. 4) Floor where staff belongings are stored are observed to have debris.
Corrective Action(s): Please do a deep clean in all the noted areas by follow up inspection.

Observation: Small bucket used to catch leak from kitchen handsink. Staff informed that repair had been contacted but they have not shown up for months.
Corrective Action(s): Find an alternative company to repair the leak at kitchen handsink immediately.
