Observation (CORRECTED DURING INSPECTION): Scooping container was stored inside a container of broth.
Corrective Action(s): Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Scoop was removed at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Prep cooler door seals were torn. Door seals were also found to have debris build-up
Corrective Action(s): Prep cooler door seals will need to be repaired or replaced to loss of cold refrigeration air and to prevent food debris from accumulating in the seals. Ensure door seals are maintained in a clean and sanitary condition.

Observation: Bleach sanitizer pails were unlabelled.
Corrective Action(s): Ensure all containers are properly labelled to identify their contents in order to prevent accidental mixing and or misuse of chemicals. Containers will need to be relabelled as needed.

Comments

-Both prep coolers were at 4C (top and bottom).
-Kitchen upright cooler was at 4C.
-Front service area counter top cooler was at 4C.
-Walk-in freezer was at -16C.
-Upright freezer was at -10C.
-Kitchen chest freezer was at -18C.
-Service area chest freezer was at -30C.
-Chicken cooked to greater than 74C.
-Hot holding was greater than 60C.
-Pho broth cooled at room temperature for approximately 2 hours and then cooled in the walk-in freezer.
-Cooked beef brisket was cooling in the walk-in freezer at the time of inspection.
-High temperature dishwasher had a final rinse temperature of 76C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail was at 200ppm.
-Blender container sanitized in dishwasher after each use.
-Deli slicer disassembled after each use for cleaning and sanitizing. Slicer was found to be clean and sanitary at the time of inspection.
-Ice machine was found to be clean and sanitary.
-General sanitation good at the time of inspection.
-A couple rodent droppings observed in the front cash register area. Clean and sanitize areas with rodent droppings and monitor for further activity - contact pest control services if needed.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until December 30, 2025.
