Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer was not setup in a spray bottle or sanitizer pail at the time of inspection.
Corrective Action(s): Staff setup 100 ppm chlorine sanitizer in a labelled sanitizer spray bottle during the inspection to sanitize prep. surfaces. Ensure 100 ppm chlorine sanitizer is setup during hours of operation to enable sanitizing of prep. surfaces after each use.

Comments

Both handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Refrigeration units were at or below 4 degrees C and equipped with thermometers.
3-compartment sink was supplied with hot and cold running water and it was equipped with three sink plugs.
Ware-washing was not occurring at the time of inspection. Manual wash, rinse, sanitize, and air dry method was reviewed with staff on shift.
Staff informed that in-use preparation utensils are cleaned and sanitized every 4 hours between use and after final use each day.
Stand mixer appeared to be in a clean condition.
Cinnamon buns are prepared in small batches approximately every 30 minutes during operational hours according to staff.
No signs of recent pest activity were evident at the time of inspection.
Staff member with a valid FOODSAFE Level 1 refresher course (expiration date: September 21, 2024) was present on shift.
Permit to operate was posted.
Signature on this report is not required due to the COVID-19 pandemic.
