205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] Observation: The newly placed into service cooler measures product temperatures of 8 C. And the small one-door cooler next to the newly placed into service cooler also measured 8 C. Temperatures of refrigerated product must be maintained below 4 C. Corrective Action(s): Adjust the thermostats on the above coolers to achieve product temperatures below 4 C. Done during inspection. Temperatures measured 4 C in the newly place into service two-door cooler after the thermostat adjustment. The one-door cooler thermostat was already set to maximum cold at the time of the initial temperature measurement. Violation Score: 5

Code 205 noted on Routine inspection # RPAI-AZ8VNL of May-29-2018 Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] (Food temperatures in the 'smoothie cooler' measured 15 C. The thermostat was at the 'maximum cold' setting. Refrigeration temperatures must be maintained below 4 C.)

Comments

The 'smoothie cooler' which measured temperatures of 15 C on Wednesday has been taken 'out-of-service' and one of the coolers which was not in use has been placed into use. Temperatures in the newly 'placed-into-service' cooler and the small one-door cooler next to it were measured at 8 C, and thermostats were adjusted 'down'. Re-inspection tomorrow to verify that the adjustments were successful in achieving the required temperatures.
