Observation: Hot holding unit had a CFL light bulb without a cover.
Corrective Action(s): Ensure all light bulbs are covered with shatter resistant covers to prevent potential glass contamination of foods. CFL light fixtures also contain mercury.

Comments

-Walk-in cooler was at 4C.
-Pizza prep cooler was at 4C (top and bottom).
-Chest freezer was at -10C.
-Hot holding cabinet was greater than 60C.
-Accurate thermometers present in cold holding and hot holding units.
-3-compartment sink used for cleaning and sanitizing. Bleach sanitizer tested at 100ppm at the time of inspection.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer tested at 200ppm. Once label falls off, ensure bottle is relabelled.
-Deli slicer properly disassembled for cleaning and sanitizing.
-Foods properly stored off the floor, covered, and protected from contamination.
-General sanitation satisfactory - ensure staff pay attention to the underside of shelving units in the walk-in cooler.
-No signs of pests noted at the time of inspection.
-Staff washroom clean and sanitary.
